Scientists explain this by the high glycemic index of potatoes, which causes sharp spikes in blood sugar levels. This, in turn, can trigger inflammatory processes in the body, including in the retina of the eye.
Experts recommend reducing potato consumption and replacing it with foods that are more beneficial for vision, such as carrots, spinach, blueberries, and fatty fish rich in omega-3 acids.
