It would seem, what could be simpler than fried eggs? However, even in such an elementary dish, there are subtleties that transform it into a true culinary masterpiece. Chef Nikolai Sarychev shares the secrets of cooking the perfect fried eggs - exactly the ones you've always dreamed of.
Golden rules of cooking:
1. No lid!
The main rule - don't cover the pan. Under the lid, steam forms, which makes the egg white rubbery and the yolk loses its creamy texture. Let the fried eggs "breathe" freely.
2. The right pan size
If you're cooking, say, three eggs - don't use a small pan. The optimal diameter is at least 32 cm. This way, the egg white will spread evenly and no unpleasant film will form.
3. Temperature is everything
Crack the eggs onto a well-heated, but not scorching pan. Too high temperature will burn the white, leaving the yolk raw. Cook on medium heat - this is the key to tender, evenly fried eggs.
4. Oil matters
Forget about sunflower oil. According to Sarychev, it ruins the taste and texture - the white burns and the fried eggs turn out "wrong." It's better to use butter - it gives a delicate flavor and protects against burning.
5. Salt - to taste and color
Some prefer to salt the oil before frying, others - add salt after the white has "set." The main thing is not to oversalt and, if possible, avoid getting salt on the yolk to maintain its neat appearance.
How to choose a pan:
- Diameter:
For 1-2 eggs, a 20-24 cm pan is suitable, for 3 or more - minimum 32 cm.
- Thick bottom:
It ensures even heating and protects against burning. The best options are pans made of forged aluminum, cast iron, or steel.
- Material:
Cast iron is classic but requires maintenance. Aluminum and steel are practical and easy to use. Non-stick coating is an additional plus.
