There are ways to determine the increased content of nitrates in watermelons by their appearance, doctor-therapist Diana Glistenkova told "Gazeta.Ru".
There are several ways to check a watermelon for nitrates. First of all, according to the doctor, it is important to evaluate the visual characteristics.
"The fruit should be symmetrical (round or oval), try to avoid fruits with obvious dents, cracks, irregularities - this is a sign of uneven growth or possible damage. The rind should be whole, clean, without cracks and visible damage. A watermelon should have a pronounced glossy shine, but not excessive smoothness. An overly glossy surface may indicate an abundance of nitrates. A quality watermelon has a bright, contrasting pattern, saturated stripes on a dark green background. Make sure there is a clear "ground spot," its brightness indicates natural ripening in the sun, not with the help of nitrates," the doctor said.
It is also important to evaluate the watermelon when cut.
"If the flesh is bright, grainy, and has a shiny surface - this is a sign of a ripe and tasty watermelon. The color depends on the variety, but it should not be unnaturally red. In this case, we may be talking about an increased content of nitrates in the watermelon," noted the doctor.
