Doctor explained how shashlik (grilled meat skewers) can trigger cancer

A popular summer dish harbors serious risks for the body, experts warn. Meat cooked over an open fire contains substances that can harm health.
As reported by BAKU.WS, Russian gastroenterologist Olga Titova told "Gazeta.Ru" about this.
"During thermal processing over an open fire, especially with direct contact with flames, carcinogenic substances can form. Additionally, when there is excess fat in the meat, it can drip onto hot coals, which leads to the appearance of smoke containing potentially harmful components. Another negative aspect from a health perspective is the excess of salt. Marinades for shashlik often include significant amounts of salt and preservatives, which increases the sodium level in the dish and can adversely affect the body," the doctor explained.
According to the specialist, the high content of salt and fats in shashlik can seriously impact the cardiovascular system, increase cholesterol levels, and provoke exacerbation of problems with the gastrointestinal tract. To minimize possible risks, the expert recommends choosing more dietary types of meat - chicken or turkey.
"It's optimal to use natural herbs and spices, avoiding excessive addition of salt and industrial sauces. As for vegetables, it's better not to cook them on the fire with meat, but to eat them fresh. The best source of dietary fiber is fresh vegetables," the doctor concluded.
